28 Mile Distilling Company
Fort Sheridan, Highwood, IL
28 Mile Distilling Company takes its name from a Prohibition-era legend: Rose Miller, a Wisconsin-born chemist's daughter who became one of Chicago's most reliable bootleggers, supplied gambling dens and North Shore estates alike with her meticulously crafted spirits, always labeled 'The 28 Special.' That story is alive in every pour at the Rose Miller Tasting Room, where Art Deco touches set a knowing, slightly subversive tone. You walk in 28 miles north of the Loop, into a place that feels less like a typical craft distillery and more like a sophisticated cocktail lounge that happens to make its own stuff. The Debonair Bourbon anchors the lineup: a blend of Kentucky straight bourbon finished in sherry and cognac casks with high-rye Tennessee bourbon underneath, earning Gold at the Beverage Tasting Institute. The gin leans London Dry, developed alongside one of the UK's foremost gin experts, with botanicals sourced from London's oldest supplier. On weekends, dueling pianists perform in the four-season courtyard alongside touring acts, which makes this a genuinely good night out rather than just a stop on a tasting trail. If you time it right, you catch live music, a plate of 28 Mile Pizza, and a Debonair Old Fashioned, all without setting foot in the city.
