CH Distillery has been making spirits in Chicago since 2013, and the name says it all: CH stands for both Chicago and the carbon-hydrogen bonds at the heart of every spirit they produce. At the West Loop tasting room on Randolph Street, you can see the stills through the glass while you drink what came out of them. The cocktail bar is dark and industrial, with just enough polish to feel like a destination rather than a production facility. The bar pours the full CH lineup, including their Illinois-grain vodka served ice cold with rye bread and cornichons, Key Gin with its citrus-forward profile, CH Aquavit, and Jeppson's Malört, the wormwood-bitter Chicago institution that CH acquired in 2018. Tours run on Tuesdays and Saturdays and run about 45 minutes, covering the science of distilling before wrapping with a cocktail. The connected Jōtō Sushi restaurant means you can follow a tasting with a full meal. Staff are notably knowledgeable and tend to get into the weeds on production in a way that feels genuinely enthusiastic rather than scripted.
