Tucked into a historic storefront in Riverside, a National Historic Landmark village designed by Frederick Law Olmsted, Quincy Street Distillery has been making craft spirits since 2012. Owner and distiller Derrick Mancini built the operation on historically inspired recipes, pulling from classic formulas to produce an unusually wide range: corn whiskeys, straight bourbons, aged and unaged ryes, several styles of gin including a proper genever, vodka, moonshine, and even an absinthe blanche built on honey. The breadth is real - this is not a one-spirit operation. You can step into the bonded production area on a Saturday tour and watch how it all comes together, then taste eight expressions in the Speakeasy bar. The bar itself leans into the 1920s theme with cocktails made exclusively from house spirits. Riverside sits about ten miles west of Chicago, and the distillery fits the neighborhood - it operates alongside a Higgins glass studio and a community art center, part of a block that takes craftsmanship seriously. Travel + Leisure named it one of the 25 best distilleries in the US in 2018, and local press has covered it steadily since the doors opened.
