Arcane Distilling

Arcane Distilling does something you won't find at most Brooklyn craft spots: they take actual craft beer and turn it into whiskey. The process is genuinely unusual - vacuum distillation at near room temperature (around 86 degrees) preserves the hop aromas and malt flavors that conventional heat would destroy, so what ends up in the bottle carries the DNA of the beer it came from. Their Alpha expression starts with a triple IPA; the Imperial uses a stout. The result is a category of its own, somewhere between a spirit and an homage to the breweries they partner with across New York State. The operation was launched in 2017 and relaunched under CEO Brian Thompson and distiller Phil Morgan (formerly of Kings County Distilling) with a focus on sustainability - they estimate using 15% less grain and 30% less water than traditional production. Based in East Williamsburg, the distillery has been building out a tasting room and is open on Saturday afternoons. If you want a look at the hand-built glass distillation equipment and a pour of something you genuinely cannot get anywhere else, this is worth seeking out.
