Atheras Spirits is a micro-distillery tucked into the second floor of Industry City's Building 6 in Sunset Park, Brooklyn, where the line between bar and laboratory is intentionally blurry. Founded in March 2024 by veteran bartender Ektoras Binikos and designer-photographer Simon Jutras - the same pair behind Harlem's acclaimed Sugar Monk - the operation draws its name and soul from the Atheras mountain range on the Greek island of Ikaria. The spirits here are not whiskey or gin in any conventional sense. Instead, you get a tightly curated lineup of amari and botanical liqueurs built from over 300 organic wild plant varieties, foraged by partners including ethnobotanist Elizabeth Kontou and meadow specialist Tama Matsuoka Wong. The result is something genuinely hard to categorize: earthy, herbal, and complex in ways that reward slow sipping. You taste these at Bitter Monk, the intimate cocktail bar that serves as the distillery's tasting room. Stained glass filters the light, the playlist leans contemplative, and the cocktail menu reads like a forager's diary. Small bites are available to keep you grounded. Reservations are possible through Resy, though walk-ins are welcome when there's space. The distillery holds a New York farm distiller license, meaning 75% of production ingredients come from within the state - a commitment that shows up in the glass.
