Founded in March 2024 by veteran bartender Ektoras Binikos and designer-photographer Simon Jutras - the same pair behind Harlem's acclaimed Sugar Monk - the operation draws its name and soul from the Atheras mountain range on the Greek island of Ikaria. Instead, you get a tightly curated lineup of amari and botanical liqueurs built from over 300 organic wild plant varieties, foraged by partners including ethnobotanist Elizabeth Kontou and meadow specialist Tama Matsuoka Wong.
