Great Jones Distilling Co opened in 2021 as Manhattan's first legal whiskey distillery since Prohibition, and the address alone carries weight: 686 Broadway in NoHo, where the building has been reimagined as a four-story monument to New York's drinking history. Every whiskey here starts with grain grown in the state, sourced from the Black Dirt region of Warwick Valley and cut to proof with Catskill Mountain water. The result is a small lineup of straight bourbons and rye whiskeys that taste unmistakably local. When you visit, you can watch the whole operation from the street-level distillery floor, where copper pot stills dominate the space. Upstairs, the tasting room pours flights alongside creative cocktails, and the full-service restaurant runs an all-day menu that holds its own against any spot in the neighborhood. On Saturdays, a live jazz brunch draws a crowd from well beyond the whiskey-curious. Tours run in small groups of ten, walking you through the production process before sitting you down for a proper tasting. It is a polished operation, but the commitment to New York grain and a century-long historical gap make it feel like something more than a bar with stills in the corner.
