Halftone Spirits opened in Gowanus in mid-2020, the project of Andrew Said Thomas, a former TV producer who spent years homebrewing before making the leap to distilling. The name honors his grandfather, a printer, and the concept carries through to how Thomas builds his spirits: layering botanicals the way a halftone print layers color dots, each element distinct but part of something cohesive. You'll find that philosophy on full display at the tasting room, where 5 to 8 different gin expressions rotate through the menu at any given time. The flagship is a New Western dry gin made with 13 botanicals - hawthorn berry, sumac, pink peppercorn, lemongrass among them - that won Best in Show at the 2021 Great American International Spirits Competition. Beyond that, there's a London dry, hop-forward overlays, and the rotating Modular series inspired by regional cuisines from Japan to South Africa. Aquavit and vodka round out the lineup, all distilled from 100% New York State corn. The space shares a building with Finback Brewery, so you can move between craft beer and craft spirits without leaving the block. Small group tours on Fridays let you follow Thomas through the production floor and taste five house-made spirits for around $30.
