Springbrook Hollow Farm Distillery sits on 200 acres in the Adirondack foothills just south of Lake George, and the setting tells you everything about how they make their spirits. Water drawn from a deep underground spring on the property goes straight into every batch, unprocessed, and the family credits it for the full-bodied character that shows up across their lineup. You can see the copper pot still right from the tasting room, which is part of the point here -- this is a small-batch operation where the whole production floor is visible, and the staff knows every product inside and out.
The spirit range runs wider than you might expect: straight rye whiskey, high rye bourbon, blended bourbon, vodka, gin, apple whiskey, moonshine, and a handful of flavored liqueurs including a coffee liqueur and limoncello. A historic wooden pipeline from the old Springbrook Hollow water supply is on display inside, a nod to the site's long history before it became a distillery.
Tastings run $5 for five samples, no reservation needed. The tasting room hosts private events for up to 83 guests, keeps a firepit outside for warmer months, and leashed dogs are welcome on the property. It's a detour from the Lake George tourist corridor that's worth making.
