Cooper's Daughter Spirits sits on a National Register of Historic Places property along Claverack Creek, in a former carriage house that once served the 1805 Jacob Rutsen van Rensselaer estate. That history isn't just scenery: Stuart Newsome spent 42 years in historic restoration before partnering with his daughter Sophie to revive the estate's own tradition of distilling and cooperage. The barrels aging their bourbon and whiskey are handmade on site, making them one of the few craft distilleries in New York that handles the full process from grain to glass to barrel. Sophie drives the flavor side, drawing on foraged Hudson Valley botanicals, locally grown fruit, and seasonal farm ingredients to produce a rotating lineup that goes well beyond the basics. You'll find Black Walnut Bourbon, Hibiscus Gin, Ramp Vodka, and a calendar of seasonal liqueurs alongside their year-round expressions. Visits happen in the Cocktail Barn and Garden, a relaxed indoor-outdoor space where you order cocktails made from the house spirits. Food trucks rotate through on weekends. The whole operation is women-owned, LGBTQ+ friendly, and welcoming to both families and leashed pets. About two hours north of New York City, it's the kind of place that rewards the drive.
