Harvest Spirits sits on Golden Harvest Farm in the Hudson Valley, where three generations of the Grout family have grown apples since the 1950s. When surplus fruit started piling up, Derek Grout turned it into an opportunity: he launched New York State's first Farm Distillery in 2008, producing spirits from apples grown, pressed, fermented, and bottled on the same land. The result is a genuine tree-to-bottle operation you won't find in a city. The flagship Core Vodka is triple-distilled from apple cider, the Cornelius Applejack revived a tradition that went quiet during Prohibition, and the John Henry Single Malt Whiskey rounds out a lineup built on local grain and fruit. When you visit, you're tasting in a converted cold storage building surrounded by 200 acres of orchard - not a themed tasting room, but the actual place where everything gets made. Fridays turn into a proper event, with live music, craft cocktails from the bar, and a Mexican street taco trailer parked outside. The rest of the week is calmer, with spirit flights starting at $5 and knowledgeable staff who can walk you through every step of the process if you want. Dogs are welcome.
