Hillrock Estate Distillery
Ancram, NY
Tucked into the rolling farmland of Ancram in New York's Hudson Valley, Hillrock Estate Distillery is about as close to field-to-glass as it gets. Owner Jeffrey Baker grows the grain on-site, and the distillery operates the first malthouse built at a U.S. distillery since before Prohibition, floor-malting barley by hand before distilling in custom copper pot stills. The process was designed by Master Distiller Dave Pickerell, the man who shaped production at Maker's Mark for over a decade.
You come here to see whiskey made the slow, thorough way. The three core expressions tell the story well: the Solera Aged Bourbon is finished in Oloroso Sherry casks using a centuries-old aging method, the Double Cask Rye moves through two different char levels of American oak, and the Estate Single Malt is made entirely from barley grown on the property, with some batches smoked over Speyside peat. These aren't approximations of craft — they're the real thing, backed by scores in the mid-90s from Wine Enthusiast, Jim Murray's Whiskey Bible, and Double Gold medals at the San Francisco World Spirits Competition.
The visitor center sits inside a restored 1806 Georgian estate house overlooking the barley and rye fields. Tours run daily by reservation, giving you a close look at the malthouse, still room, and barrel storage before you settle in for a tasting.
