Bourbon Gin Rye Whiskey Whiskey

KOVAL holds a rare distinction: it was the first distillery to open in Chicago since the mid-1800s. Founded in 2008 by husband-and-wife team Dr. Robert Birnecker and Dr. Sonat Birnecker Hart, the distillery draws on Robert's Austrian family heritage and a grain-to-bottle philosophy that's stayed consistent since day one. Every spirit starts with certified organic Midwestern grains, milled in-house, and distilled through a custom 5,000-liter Kothe copper pot still using the European "heart cut" technique, which keeps only the cleanest, most refined portion of each run. The result is a lineup that includes bourbon, rye, four-grain whiskey, dry and barreled gin, and a range of liqueurs that regularly collect international medals. You'll find the tasting room inside the working production facility on Ravenswood Avenue, part of Chicago's Malt Row corridor. It's a bar, it's a distillery floor, and it's a place where you can genuinely watch the spirits you're drinking get made. Flights, cocktails, light bites, and coffee drinks fill out the menu. The space is cozy without being precious, and the staff know the products deeply. Tours run about 45 minutes and cover the full production process, ending with a guided tasting. This is one of the few urban craft operations in the country where the certified organic and kosher credentials aren't marketing window dressing. KOVAL has over 100 international awards to its name, and the quality in the glass backs it up.
