Maplewood was the first operation in Illinois to put brewing and distilling under one roof, and that dual identity shows up in everything from the cocktail list to the canned drinks in your hand. Adam Cieslak and Ari Megalis started homebrewing and distilling in 2005, launched production in 2014 with a 250-liter Kothe still, and opened the Logan Square lounge three years later. The result is a place that genuinely earns its neighborhood-bar feel without coasting on it. You can order a Son of Juice IPA, then pivot to a cocktail built on their Lounge Bourbon or Spruce Gin and not feel like you wandered into two different places. The spirits program runs wide: aged and clear whiskeys, multiple bourbons, gin, white rum, a Vibration cask-finished series finished in PX Sherry, Amburana, and XO Cognac barrels, plus a full line of liqueurs made with local ingredients like Hexe Coffee. The food holds its own too, with upscale pub cooking that goes past bar snacks. Tucked at the end of a residential street in Logan Square, the space is compact and lively on weekend nights. It can get crowded, so showing up early or on a weekday puts you in better shape to actually snag a seat and take your time with the list.
