Rhine Hall Distillery

Rhine Hall is one of the only distilleries in the US focused almost entirely on European-style fruit brandies, and that focus shows in everything from the bottle labels to what's in your glass. Father-daughter team Charlie and Jenny Solberg opened the distillery in 2013 after Charlie spent years studying eau de vie traditions in Austria and Germany, and the spirits they make here have no added flavorings, sweeteners, or neutral spirits - just fermented and distilled fruit, about 25 pounds of it per bottle. The building on Fulton Street is a converted 1800s plumbing warehouse, and the industrial bones are still very much present: exposed brick, open production equipment, and that slight sweet-ferment smell that means you're in the right place. The seasonal cocktail menu leans hard into the house spirits, so you're getting an Apple Brandy Old Fashioned or a Chai Sour made with something you could not find at a regular bar. Tastings and distillery tours are available by reservation, and the distillery also hosts cocktail-making classes that draw regulars back a few times a year. The West Loop and Fulton Market neighborhoods have filled in around them, but Rhine Hall was here before the restaurant boom and feels like a product of the neighborhood's older, grittier chapter.
