Rush Creek Distilling

Rush Creek Distilling sits in a converted manufacturing building in Harvard, Illinois, about 70 miles northwest of Chicago, and it feels like exactly the kind of place four friends who grew up here would build. Founded in 2017 by four lifelong Harvard residents, the distillery runs on local grain -- roughly 90% of ingredients come from farms within five miles -- and water drawn from one of Harvard's deepest municipal wells, purified through reverse osmosis.
The centerpiece is Liberty, a custom 600-gallon copper pot still hand-built over 14 months in Boise, Idaho. You can see her in action from the Founders Loft, an upstairs lounge that overlooks the stillhouse. The main floor has an industrial but warm feel -- wood and metal throughout, plenty of tables, and a full cocktail menu built around the house spirits. On weekends, food trucks set up outside on the On the Rocks Patio, where the sunsets draw a crowd and dogs are welcome.
The lineup spans vodka, gin, and whiskey. Their bourbon and rye programs have come into their own -- by 2025, they're pouring a wheated straight bourbon made with locally farmed corn and wheat, a 100% rye, and a 16% rye bourbon alongside a barrel-rested gin that rewards patience. Saturday tours run at 2pm and take you through the stillhouse for $10. The tasting room draws a mix of locals and day-trippers from Chicago and Lake Geneva, Wisconsin, and the vibe stays relaxed regardless of the crowd.
