Two Eagles Distillery

Two Eagles is the first legal distillery in Mount Prospect, a northwest suburb about 20 miles from downtown Chicago, and the founders had to get local ordinances amended just to open. That origin story says a lot about who they are. Co-owners Jesse Zien, Matt Georgacakis-Nurre, and Aaron Johnson built the operation around hyperlocal grain sourcing, locking in farm partnerships with Janie's Farm and Cow Creek Farm before they finalized anything else. The result is a tight lineup that includes Prospect Vodka, a corn-based spirit distilled and filtered ten times; Prospect Gin, a prohibition-style expression built around coriander and angelica root; Prospect Reserve, a seven-year Kentucky whiskey finished in California red wine barrels; and Lamassu Arak. They also distribute bottled cocktails to the northwest suburbs. Two Eagles runs as a production-focused operation, meaning you won't find a tasting bar on site, but their spirits are available at bars and retailers across the area.
