Whiskey Acres is one of the genuinely rare things in American craft spirits: a true estate distillery. Every bottle starts in these fields outside DeKalb, where the Walter family has farmed roughly 2,000 acres since the 1930s. The grain is sown and harvested on the property, then distilled, barreled, and bottled right here. When you tour the facility, you see the whole arc from soil to glass. Not as a marketing claim. As a physical reality you can walk through.
The tasting room is built from recycled wood pulled from a 1900s dairy barn, with a fieldstone fireplace and photos of Walter family farmers going back to the 1890s. Food trucks pull up on weekends, live music fills the patio on Fridays and Saturdays, and dogs are welcome inside and out.
The spirits earned their reputation. The Bottled in Bond Bourbon and Bottled in Bond Rye each took Double Gold at the San Francisco World Spirits Competition in 2021. The Blue Popcorn Bourbon, made from a heritage variety of blue popcorn corn, collected Double Platinum at the ASCOT Awards. The Straight Rye was named best in Illinois at the ACSA Heartland Spirits Competition.
Tours run 60 minutes and cover the whole operation: the fields, the still (a 500-gallon vessel named Flo), and a tasting of three spirits with a souvenir shot glass. At $12.50 a person, it's one of the better deals in Illinois craft spirits. DeKalb is about an hour west of Chicago, but the drive is worth making.
